Coconut Amazake Chai Latte
Ingredients (Makes 4 mugs):
★ 2 Cinnamon sticks
★ 8 Cardamom pods
★ 4 Cloves
★ 6 Peppercorns
★ 1 Star Anise
2cm piece Ginger, sliced
3 Black teabag (We recommend Ceylon, Assam or English Breakfast)
500ml Boiling water
250ml Whole Milk
250ml Coconut Milk Amazake
1-2 Tbsp Brown sugar
Pinch of Cinnamon to serve (Optional)
Method:
1. Toast the spices (marked ★) in a frying pan until they are fragrant. Add the spices, ginger and tea bags into a teapot or cafetiére with 500ml freshly boiled water and leave to infuse for 10minutes.
2. Heat the milk with brown sugar in a pot, stirring until sugar has dissolved. Once the milk is lightly steaming, froth the milk with a milk frother or whisk to foam.
3. In another pot, heat the Coconut Milk Amazake, but be careful not to boil it. Add the brown sugar and stir until dissolved.
4. Strain the tea between 4 mugs or heatproof glasses, then pour in the Amazake and milk, but leave the froth. Stir to combine. Top each latte with milk foam and dust with a pinch of cinnamon and serve immediately.
